How do I redefine the reference plane that already used for sketch? I just want to change/redefine the sketch reference plane to another one.

Double click the sketch that you want to redefine the plane and activate. Then go to
Menu -> Tools -> Reattach Sketch
There you have opportunity to reattach/redefine the sketch plane to new plane or flat face
