Do you mind helping me out with one thing? When blending two shapes at 10:43, when I select my first curve it doesnt select the whole loop

After you launch blend command look at the top white prompt bar. There in the bruckets should be chain edges, select it before you start selecting edges.

It didn't work, i am still not able to select edges

Make sure you selecting loop and when you do so rhino automatically ask you for the next edge to plase the blend between
how do you deal with the fillets? I mean, when I apply filletsrf command to the two surfaces, it gives a faulty result

Propably you don’t have option trim activated at the top bar in the brakets.
