That's your choice. The MSI is the proper installer. The zip archive is the portable version.
If you have Steam, you can add Blender to your library there and don't have to deal with installing it manually.

Yes. And it's blessing and a curse. As far as I know you can't opt out of it. Sometimes that can be a pain if there are huge changes or something is broken in the new update.
lol It was a riot when 2.79 updated to 2.80. All these steam users suddenly faced with a different GUI. Confusion reigned. Dont let anything update your system without asking first.
Just wait. This is temporary it can be solved anytime soon
